The grapes are harvested in September. The wine, made from a unique blend of bacon and uni blanc, is vilified in a natural way, without the addition of sulphites and kept in vats at low temperature.
The distillation takes place in winter in the traditional copper fire-driven still of the house. The wine rises in temperature, the water evaporates and only the alcohol is preserved and then placed in barrels.
OAK is aged for 3 years in French oak barrels. It is during that time in the casks that an astonishing alchemy between the alcohol and the wood is created.
