Alvi's Drift Méthode Cap Classique Brut Nature

Brut Nature is sparkling wine with no added sugar and it is made according to the Method Cap Classique (MCC) with a second fermentation in the bottle, just like in the Champagne region. The Alvi's Drift MCC Brut Nature is made of chardonnay (70%) & pinot noir (30%). The chardonnay comes from calcareous soils on the banks of the Breede River. The pinot noir grows on slate, on north-facing slopes. The grapes are picked early in the morning to preserve the fine acidity.

The grapes are picked by hand and soft pressed as full bunches with the pneumatic press. The must is fermented at low temperatures and then aged on the lees for 36 months. The wine then undergoes the 2nd fermentation in the bottle. No sugar is added after disgorgement, so that the wine comes out as pure as possible. The result is an MCC with a fine mousse and aromas of apple, citrus and notes of brioche. In the mouth the wine is fresh, slightly filmy, with good acidity and a complex, harmonious aftertaste.
